Dilly Beans

First I have to post a pic or two (ok maybe more) of the kids. This was one of our property shopping trips.

O.K. Dilly beans.

We haven’t had dilly beans for almost 2 years so at the pleading of Kalina we now do. I didn’t take pictures while putting them together but I do have a picture of the finished product! I did some slight modification of the recipe which can be found in the Ball Blue Book but nothing that would change the safety of them.  I doubled this recipe and it made 8 pints.

About 2 lbs. green beans – long slender ones look so nice

1/4 cup pickling salt

1 1/4 cup apple cider vinegar

1 1/4 cup white vinegar

2 1/2 cups water

4 tbl.  crushed red pepper (I used 4 jalapeno peppers in 4 of the jars)

4 cloves garlic (freshly dug!)

4 tbl. dill seed (I had fresh dill so out to the garden and snip, snip)

Place salt, vinegars, and water in a pot and bring to a boil.

Hot, sterile jars,  place dill and garlic in the bottom and pack leaving 1/4″ headspace. Add 4 jalapenos (I put small slits in them) to 4 of the jars. Not everyone here likes spicy!

Add hot brine with 1/4″ headspace.

Remove bubbles, wipe tops of jars, and put on lids and bands finger tight.

Boiling water bath for 10 minutes. Be sure to check if your altitude changes your processing time. Wait at least 2 weeks to eat. I said they couldn’t open before winter!

Jalapenos. I used these in the dilly beans. We’ll also make Jalapeno poppers when we have a few more and I’ll try to post about it.

Now that I’ve overloaded you with garden pics it’s time for me to finish up and get ready to head to bed. (And I didn’t even post all of them!)
